It may require a re-compilation of Pine. You want to specify
"allow-changing-from" in the feature list of pine.conf and in your
.pinerc  -- if this option is not allowed, then you need to recompile
pine to allow it.

Just edit /etc/pine.conf and your ~/.pinerc with emacs or whatever you
like.

You also need to change the customized-hdrs field to something like:

customized-hdrs=From:mgraffam at mathlab.sunysb.edu

after setting it up, go into pine and compose a message hit "control-r"
when creating the header and it should show a From field that you
can change (the default will be whatever email addy you put in
the customized-hdrs field).
