If you want to prevent stuff from starting up at runtime, use the
sysv-rc-conf tool to pick which daemons start. I think Redhat also has
some GUI tool, but I don't remember... I switched to Debian a few years
ago.
Anyhow, like other people have said, don't read too much into the memory
usage numbers. Shared libraries, video framebuffers, memory mapped files,
and all kinds of other things inflate those. Look at the output of
"free". The the difference between the "Used" and "Cached" fields gives
you the amount of RAM actually used.
Also look at the output of "vmstat" after you've been using your system
for a while. If you see big numbers for "si and so" that means your
system has been swapping pages in and out of memory, i.e. its been
thrashing, and freeing more memory will help. If not, you probably won't
see much improvement by freeing up RAM.

It would be easier if you gave me a list of what is there and I can try and
figure out what you probably don't need. You can leave out things you know
you obviously need (like "network", "mount", etc.).
