Before I got a feel for what was going on, I use to read a lot of
stuff on the linux documentation project: http://tldp.org
Just browsing around i noticed:
http://tldp.org/LDP/intro-linux/html/intro-linux.html
http://tldp.org/LDP/GNU-Linux-Tools-Summary/html/GNU-Linux-Tools-Summary.html
this also was sort of a neat overview of documentations:
http://www.debian.org/doc/
the debian page points to these nifty quick references:
http://www.digilife.be/quickreferences/quickrefs.htm
http://refcards.com/subject/all
I like richards VM idea, also keep in mind live CDs.
On the favorite distribution contest end, from a mathy point of view,
id go with an OS that has alot of math packages for it.
Debian and RHEL support huge numbers of packages, and are the distro
of choice for many large scale supercomputing environments. i very
rarely find a popular math library that doesnt have a packaged for
these OS's.
Scientific Linux (a free rebuild of RHEL) even has the word science
(sort of like math) in it!
Also a lot of the ubuntu forum answers, mentioned by dan, are almost
identical answers for debian.
