I could not reproduce your problem.
Will you try debug logging, if no one will reply to you?

# uniondbg -d /sysroot/usr 8
# busybox touch /sysroot/usr/foo

You may need to set /etc/syslog.conf or /proc/sys/kernel/printk to get
unionfs debug log. Its priority(or level) is KERN_DEBUG.
